Slice a baguette into 8 1-inch pieces. Brush each slice with oil. Bake the bread until golden about 8 to 10 minutes. Remove from oven and allow to cool for about five minutes. Spread ricotta cheese on each slice, top with fig, drizzle on honey, a bit of black pepper and some fresh mint.
