【はらこ飯】元宮城県民が教える本場のはらこ飯の作り方

This time, I'll be showing you how to make "harako rice," a local dish from Watari Town, Miyagi Prefecture. Rice cooked in salmon broth is incredibly delicious, with concentrated umami flavor. ★Please subscribe★    / @tv-yl4tj   ▼Table of Contents 0:00 Opening 0:13 How to Make the Broth 0:49 Preparing the Salmon 1:35 Boiling the Salmon 2:01 Cooking the Rice 2:36 Plating 2:51 Tasting ▼Ingredients (Serves 3) Salmon roe: As much as you like Salmon: 3 slices Rice: 2 cups ▼Broth Water: 200cc Dashi stock: 1 teaspoon Soy sauce: 2 tablespoons Sake: 2 tablespoons Mirin: 2 tablespoons Ginger juice: 1 tablespoon of juice Sugar: 1 heaping teaspoon Ajinomoto: 5 shakes ▼Directions 1. Remove the skin from the salmon and slice into 7-8mm thick strips. Remove any bones. 2. Add the broth to a frying pan, bring to a boil, and simmer the salmon over medium-low heat for 4-5 minutes. Be careful not to overcook, as the flesh will toughen. 3. Transfer the broth to a separate container and chill. If you're in a hurry, chill it in ice water. ④ Put the pre-washed rice and the broth from ③ into the rice cooker and cook. If the rice does not reach the 2-cup mark, add more water. At this point, do not add the salmon. The moisture will be drawn out of the flesh and it will become dry. ⑤Once the rice is cooked, mix the rice, place the salmon on top and keep warm for 10 minutes. ⑥Once the salmon is warm, arrange the rice, salmon and harako (salmon roe) in bowls and it's done. You can add toppings such as green onions and wasabi to taste.
