Express Idli Sambar
Express Idli Sambar, mild and rich for sambar idlis. Ingredients 1. Medium size big onion - 1 no 2. Tomato - 4 nos 3. cubed pumpkin - 100 g 4. Green Chili to Taste 5. Shallots - 10 to 15 nos Method 1. Add onion, tomato, green chili with 2 cups of water and cook for 3 whistles 2. Separate the water and puree the cooked vegetables 3. Add 1 tbsp oil in a kadai 4. When oil is hot , sauté the shallots till translucent 5. Add a bit of water and cook covered till soft 6. Add the vegetable puree ,separated vegetable broth and salt to taste 7. Bring to a boil 8. Temper Oil, mustard seeds, methi seeds, urid dal, asafetida, curry leaves 9. Fry 1 tbsp sambar powder in the tempering oil and fry for 30 secs 10. Mix well 11. Serve over hot idlis
