This is non-chill filtered sourced whiskey. Clonakilty was founded in 2016 by the Scully family have been farming the same land for 9 generations on the Southwest coat of Ireland in Cork Co. The distillery is in the town of Clonakilty on the waterfront which houses 3 pot stills, the visitor center and shop. They grow a heritage barley varietal on the farm which is in the shadow of the Galley Head Lighthouse and has centuries sea mist, soft rain, and ocean spray create the terroir of the soil. The aging warehouse sits 200 feet above the water surrounded by the Atlantic ocean on their sides on the family farm. They blend their whiskey slowly over a 2-week period using a single deep well that has been filtered the ancient Irish rock formations over the centuries. It has a 2% per year angel share. They are finishing their whiskey for up to 12-month in things such as port pipes, rum casks, cognac casks, sherry butts, stout, barley wine, IPAs, Bordeaux, and other red wine casks. All start in ex-bourbon casks. They make single pot still Irish whiskey which is triple distilled. Even won world’s best Irish new make in their first year of distilling.
