Cardoon is a vegetable from the thistle family, like artichoke. The cardoon, Cynara cardunculus also called the artichoke thistle, is a thistle in the family Asteraceae. It is a naturally occurring species that also has many cultivated forms, including the globe artichoke. Soak it in water and lemon (so it doesn't darken). Put water and lemon in a saucepan and bring the thistle to the boil for 15 minutes. Drain. Prepare breadcrumbs with minced garlic inside. Cut the thistle into thin strips, put it in a pan to brown with oil and previously prepared breadcrumbs. Turn occasionally, when the bread is toasted the dish is ready.
