In our new vlog, we go grocery shopping, do a big weekly shop, unpack, and prepare a juicy lula kebab with vegetables. Looking forward to a summer vacation by the water, delicious pizza on the shore, and a trip to Riga's Central Market for fresh produce. 🍢 LULA KEBAB To prepare, you will need: • 500–600 g lamb • 1 kg beef • 1 large onion • salt and spices to taste You can also use other meats. For example, chicken fillet—it's quite sticky and works well for lula kebab. However, I wouldn't recommend chicken thighs: the mince will be too runny, and the lula kebab might not stick well to the skewer. For added flavor, the following are perfect: • Svan salt or Adyghe salt • ground black pepper • hot pepper • dry adjika • a bunch of cilantro or parsley The most important step is to thoroughly knead the minced meat. It should become sticky, dense, and acquire a characteristic fibrous texture. Fry the lula kebab on skewers over an open flame for about 2-3 minutes on each side, until nicely golden brown. 🥗 VEGETABLES Any vegetables you like will work for the vegetables. For the marinade: • salt • pepper • a little vegetable oil • your favorite herbs • sugar Don't be afraid to add sugar—the vegetables won't become too sweet, but the flavor will be more vibrant and balanced. You can cook the vegetables in the oven, in a frying pan, over an open flame, or in an air fryer. Transfer the hot vegetables to a bowl, add feta cheese and olives, and you'll have an incredibly delicious warm summer salad.
