Today I'm sharing a recipe for a thin apricot tart. Apricots are here! We must take advantage of these first fruits of the season. Everyone loves apricots; their tangy flavor is intense, and they're wonderful both raw and cooked. They're delicious, but they're also beautiful with their lovely orange color that brightens up pastries and other dishes. For a change from the traditional apricot almond tart, I suggest a thin apricot tart. Here, I've made it with puff pastry, which I cover with a light filling before topping it with apricots. The filling will seal the pastry and prevent it from becoming soggy during baking. I love thin tarts made with puff pastry; they're perfectly crisp and very light. They're so satisfying and not heavy like tarts made with shortcrust pastry, for example. This thin apricot tart is a little marvel that I urge you to try; you won't be disappointed.
