A slow, simple day at home - the kind that fills you up without wearing you out 🌿 We started the morning with high protein cottage cheese pancakes (so fluffy and surprisingly easy), moved into a kitchen reset, and finished the day transforming our front flower bed with bright marigolds and fresh black mulch. The before and after made my heart so happy! it went from old bleached out mulch to something so cheerful and intentional. No rushing, no agenda. Just a quiet productive day at home. ☀️ In this video: 🥞 High protein cottage cheese pancakes 🧹 Kitchen cleaning & reset 🌸 Planting marigolds + fresh black mulch in the front flower bed 🌿 Before & after garden transformation 🥞 Cottage Cheese Pancake Recipe: Ingredients 1 1/4 cup flour (any kind, I used 00 Italian flour) 2 teaspoons baking powder 1 cup cottage cheese 3 large eggs 2 Tablespoons milk of choice (or more for thinner pancakes) 2 Tablespoons oil (melted and cooled, I used olive oil) 1 Tablespoon maple syrup 1 teaspoon vanilla extract mini chocolate chips if desired (measure with your heart) Directions In a large bowl, combine the dry ingredients and whisk. Add the cottage cheese, eggs, and milk, oil, maple syrup and vanilla to the blender and blend until smooth. Add the blended ingredients to the dry ingredients and stir gently. Heat a skillet over medium heat, spray with cooking oil. Scoop batter into the pan and cook until the edges are dry and bubbles begin to form on the pancake. Flip the pancake and cook until the top is softened and the pancake is cooked through, about 1-2 minutes. Stack cooked pancakes on top of one another to keep warm.
