Pan Gallego con Moña is a style of bread from Galicia, Spain, made with high hydration dough that is usually a mix of strong flour and local Galician flour. The dough is shaped gently, rested for a brief period of time (ambient temperature dependent), and then a bow or "moña" is twisted on the top of the dough, and it's baked on a hot stone -- or in an enclosed vessel in the case of the bread here.
