ДИМЛАМА-ДОЛМА ||| Новый рецепт Сталика Ханкишиева для программы Qazan-Mangal на АзТВ AzTV

Dimlama/dumlama/damlama/dimdama is a dish in which some of the ingredients are fried and some are steamed on the "second floor", under a closed lid. It is common in Central Asia. Dolma is a dish in which hollow vegetables or plant leaves are stuffed with minced meat and any other ingredients. The dish is common in Central Asia, Iran, Turkey, the Caucasus, as well as the Balkans and all countries that have in one way or another experienced cultural influence from the Turkic peoples. The fact is that these two dishes are easily combined into one! The lower part - the frying, can be prepared according to Uzbek traditions, and the upper part - actually, the dolma itself - according to Azerbaijani traditions. The minced meat can be prepared from a mixture of different meats - lamb and beef or from one type. Mince the meat, fry the onion, add the necessary spices to the onion, lower the meat and fry lightly, so that the meat only has time to turn white. Season with dry herbs and add rice, boiled in boiling water for two minutes. Let the mince cool. Stuff all kinds of vegetables, cabbage leaves, etc. Heat vegetable oil or fat in a cauldron, fry the onion and meat in pieces. Add carrots, mashed tomatoes, fry, add spices, salt and add a little water so that the products are barely covered. Sprinkle the zirvak with herbs, put small potatoes on top, you can turnips. Put the vegetables stuffed with mince on top of the potatoes, put the garlic heads, hot peppers whole, cover with a lid, reduce the heat and cook for about 30 minutes, until the vegetables from the dolma are ready.
