Hello, friends. Today we're making a "badass" samsa. It's "badass" because the dough here is the same as in the classic recipe. But how perfectly this dough pairs with the filling! I liked this recipe even more than the classic one. Let's make this samsa together. So let's get started. Let's make the dough right away. Crush sifted flour with a pinch of salt and chilled (!) butter into crumbs. Pour beer into the bowl with the crumbs and knead the dough right there, first with a spoon, then by hand. The dough will be soft, but the butter prevents it from sticking to your hands. Place the dough in a plastic bag and refrigerate for an hour, or at least 30 minutes. Meanwhile, make the filling. To make the filling juicy and delicious, I add a lot of onion to the minced meat, and I make sure to chop the onion finely rather than blending it. Place the finely chopped onion and finely chopped herbs (dill, parsley) in a bowl with the minced meat. Season with salt and pepper to taste, and add spices. I use dried garlic and khmeli-suneli for the spices. You can use any spices you like. First, thoroughly mix the onion with the salt and spices and mash it with your hand to release the juices. Now mix the minced meat with the onion and herbs, and then gradually add water. Beat the minced meat until the water is absorbed, and the filling is juicy but not runny. This is how soft and elastic the dough becomes after proofing. Place the dough on a work surface and divide it into portions. The size of the pieces depends on how big you want the samsa to be. I think 18-20 pieces is just right. Roll out a piece of dough into a thin flatbread, about 3 mm thick. Place a tablespoon of filling in the center of the flatbread and pinch the edges together, gathering the edges toward the center, making small folds. Place the finished samsa on a baking sheet lined with parchment paper. I made 20 samsa. To make the top of my samsa look pretty, I brush it with a mixture of one small egg, a spoonful of sour cream, and a spoonful of vegetable oil. And to make it even prettier, sprinkle the top with sesame seeds. Bake the samsa in the oven, preheated to 180 degrees Celsius, for 35-40 minutes. I turn on both heating elements without convection. And these are the delicious samsa we got. We really loved this samsa recipe. I hope you will too.
