Korean Dining Table (Thursdays, 7:40 PM, KBS1) “Wild Mountain Delicacies - Hunter’s Table” (Aired February 26, 2015) Gangwon Province, with its high, deep mountains, was a paradise for wild animals. In winter, waist-deep snow blocked the paths of both people and animals. In this mountainous region, where roads were blocked on all sides, the only way to find meat was to go hunting with spears. The only way to catch a glimpse of wild boar was to join the villagers' efforts, following their tracks for days and days. On the day of the precious boar hunt, the entire village was filled with celebration. A successful hunt was considered a village festival. Hunting was thus deeply intertwined with our lives. We explore the stories of hunting and the food that fed hungry bellies and was shared by everyone. ■ Winter Hunters' Blood Boils During the winter off-season, people in rural villages trained wild falcons to hunt pheasants. Even in the deep valleys of Hongcheon, many people used falcons to hunt pheasants. Likewise, hunters were ubiquitous in mountainous regions. Hwang Jong-geun and Kang Eun-su, hometown friends with 30 years of hunting experience, ventured to Wonju, a newly opened hunting ground, for a hunt this year. However, their February wild boar hunts often ended in vain. Memories of hunting rabbits and sparrows together during the off-season were childhood pastimes and enriching meals. From slaughtering a pheasant to make broth and making noodles with the common buckwheat, to simmering the slaughtered pheasant, to braised short ribs made with wild boar, to tofu pickles made by roasting and marinating tofu in soy sauce for long-term storage, we explore a table filled with the flavors of the wild and the wisdom of our ancestors. ■ Learning the Love of Old Women At the foot of Hwangbyeongsan Mountain, over 1,400 meters above sea level, the village is a single, yet scattered, collection of houses. Before the Yeongdong Expressway opened, the villagers of Chahang-ri made a living by hunting animals on Hwangbyeongsan Mountain. In winter, people wearing snowshoes and sleds, armed with spears, would go on wild boar hunts. Sim Yeong-ja was adept at preparing and cooking the wild boar her elders had hunted. When a successful hunt returned, the villagers gathered together. Sharing the food equitably, wild boar was a crucial winter staple. The bitter cold made the boar fatter, and its hides were dried under the eaves, making them a long-lasting food. What about the taste of corn pancakes, which quenched hunger on days spent wandering the mountains in the cold? ■ A Hunting Philosophy Passed Down Through Generations Across the country, there are veteran hunters recognized by hunters. Shin Dong-ju of Yeoncheon, Gyeonggi Province, is one of them. His father has been hunting since his father's time, and now his two sons have carried on the family tradition. Hunting wild boar requires a herder to herd the animals into a path, a footman to trace their tracks, and a hunter to guard the path. The hunting lesson the two sons learned from their father is this: "To kill a beast, you must also know how to prepare it." The eldest son, Shin Ju-seop, visited his mother-in-law's house with some wild boar meat he had prepared himself. They boiled the boar's trotters to make soup and made dumplings with the meat to share with the whole family. Jangjorim, made from the hind legs of wild boar, is a time-honored preserved food that is a staple in any hunter's home. ■ Yeongwol's Renowned Dog Hunter Yeongwol is one of the areas designated for hunting this year. Kim Ju-seok, born and raised in Yeongwol, overlooking the Namhan River, was once a renowned fisherman. He first learned how to hunt pheasant 20 years ago, accompanying a local elder. Now, he hunts wild boar with his dog, and when the hunting grounds are closed, he hunts harmful birds and plants in areas where crops have been damaged. Because wild boar meat isn't readily available, he sometimes brings it to the elderly. Kim Joo-seok married his elementary school classmate. He's grateful to have friends by his side who can grow old with him, even as he ages.
