体にやさしいラーメンを届けたい...浜松市で90歳の女性が厨房に立つ「ラーメン味佳」親子でつなぐ昭和の味【愛されごはん】
A timeless taste of the Showa era, loved across generations. A 90-year-old woman continues to work in the kitchen, dedicated to making "ramen that's gentle on the body." The original flavor from the restaurant's founding is now preserved by a mother and son. A light soy sauce broth made with pork bones, chicken bones, and seafood stock, served with homemade noodles and homemade char siu. "Ramen Ajika," located in Maruzuka-cho, Chuo-ku, Hamamatsu City, is popular for its traditional Showa-era flavor. The business is now run by a salaryman son. The ramen is made by Takashi Konagai (65), but until seven years ago, his mother, Susumi (90), had been making ramen alone for 31 years. When Susumi was 83, it became physically difficult for her to manage the shop alone, and her son, Takashi, began helping out. Takaji Konagai "I'm a salaried worker. I help out here on weekends while working as a salaried worker. I really don't want to lose the shop and the taste. I don't want to lose it, so I want my mother to live a long time, but she can't do it alone. She has to work hard until she's 100." Preparation begins at 4 AM. Motto: "Safety" and "Health" Susumi's motto is "Ramen that's gentle on the body." She's committed to homemade ingredients, making the noodles, vegetables, and char siu herself. At 4 AM, "Ramen Ajika" begins with preparing the noodles. Susumi Konagai (90) "If I make it the way I want, I can make ramen that's gentle on the body. The proportions, the attention to detail—that's my only commitment." Takaji, her son, has inherited his mother's commitment. Handmade dumplings from the wrapper. A "deep flavor" that brings smiles to customers' faces. Susumi started her ramen shop when she was 53, after her four children had become independent. Even back then, the ingredients used in the restaurant were homemade. Susumi Konagai (1998) "I can eat with peace of mind knowing what I make and how I make it. I feel like it's definitely good for my health, and I'm proud of it." Now, most of the vegetables used in the restaurant are purchased, but Susumi insists on homemade ingredients whenever possible. The dumplings, with their handmade wrappers and cabbage that Susumi finely chops and salts herself, are a masterpiece that brings out the sweetness of the vegetables and embodies her wish for everyone to be healthy.
