Today we're making lentils with chorizo. A timeless recipe, one I make at home almost weekly. It's one of the most popular legumes at home. I could tell you, it's almost the only one they don't complain about. And I'm so happy because I know they're super healthy. I've cooked the recipe in a pressure cooker. But if you use a conventional pot, the steps are exactly the same. The only thing that changes is the cooking time for the lentils. They usually take about 35 minutes. If you use a pressure cooker, the time it will take once the steam is released is about 20 to 25 minutes.
