Today we're baking a true culinary masterpiece – a delicate chocolate cake with a light and airy sponge base, silky cream, and a delicate ganache. This dessert impresses at first glance and captivates from the first spoonful. In this video, I'll show you all the secrets of the kitchen: from the perfectly fluffy cake to the delicious chocolate glaze. Join us for the recipe – and the result will exceed all expectations! Preparation of the cream (1 part): 2 egg yolks. 90 g sugar. 10 g vanilla sugar. 3 tablespoons of flour. 200 ml milk. Add in portions and stir until smooth. Allow to thicken while stirring constantly. Do not boil, but heat to approximately 80°C. Cover with cling film. Allow to cool to room temperature. Preparation of the sponge cake: 200 g sour cream (or thick yogurt). 1 teaspoon of baking soda. Stir until smooth. 4 egg yolks. 200 g sugar. Beat until light. Add the prepared sour cream with baking soda. Stir. 3 tablespoons cocoa powder. Mix well. 6 egg whites. A pinch of salt. Beat until fluffy. 200 g sugar. Add gradually in small portions, stirring constantly. Beat until the sugar dissolves and soft peaks form. Mix both masses. 260 g flour. 1/2 part seven. Stir carefully. Sift the remaining flour and mix again. Baking pan with a diameter of 24 cm. Bake in a preheated oven at 180°C (350°F) for 45–55 minutes. Use a wooden stick to check if the mixture is ready. Allow to cool to room temperature. Cut the top layer to smooth the surface. Moisten with a little milk. Preparation of the cream (part 2): 200g butter. Beat for 3-5 minutes until the mixture is fluffy. Add the pudding gradually in small portions. Mix until smooth. Spread the finished cream onto the sponge cake base. Preparation of the ganache: 100 g dark chocolate. 180 ml cream (33–36%) A pinch of salt. Microwave or steam to melt the chocolate. 20g butter. Mix until smooth. Pour over the cake. Let cool in the refrigerator overnight. For decoration: Fresh berries, mint leaves, chocolate balls. Here's our chocolate cake—moist, rich, with luxurious cream and an incredibly delicious ganache.
