You're Just Lazy Part 28 Beef Hedgehog Meatballs with Artichokes and Peas Ingredients: For the meatball mixture • 1 kg ground beef • 1 onion, finely chopped • Handful of chopped parsley • 1 cup basmati rice (uncooked) • 1 teaspoon of Maimon Spices Meatball Seasoning • ½ teaspoon of Maimon Spices Finely Ground Black Pepper • 1 teaspoon of Maimon Spices Ras El Shaban from Maimon Spices • ½ teaspoon of Maimon Spices Cumin • 1 heaped teaspoon of Maimon Spices Salt • 1 egg • 2 rounds of olive oil For the sauce • 3 tablespoons of olive oil • 1 onion, coarsely chopped • 6 stalks of celery, chopped • 1 tablespoon of cilantro • 1 bag of frozen artichokes (thawed and quartered) • 1 bag of frozen peas • 1 teaspoon of turmeric from Maimon Spices • ½ teaspoon of black pepper from Maimon Spices • 1 teaspoon of salt from Maimon Spices • 1 liter of boiling water • Celery leaves for garnish How to prepare 1. Prepare the meatballs: In a large bowl, place the meat, onion, parsley, rice and all the spices. Add the egg and oil, and mix well until the mixture is uniform. 2. Make the meatballs: Place baking paper, form medium-sized meatballs with your hands and set aside. 3. Prepare the sauce: In a sauté pan, heat olive oil, add onion and fry until golden brown. Add the celery, celery, quartered artichoke and peas. Season with turmeric, pepper and salt, and mix well. 4.
