⬇️English recipe follows⬇️⬇️ 淮山蓮子百合瓜衫魚湯 材料： 瓜衫魚2斤 鮮淮山2支 蓮子一兩 百合一兩 杞子一兩 薑一舊 （以上材料，可隨意決定份量） 處理： 1. 蓮子，放碗內，大滾水浸至軟身。 2. 百合，，放碗內，大滾水浸至軟身。 3. 魚，清除內臟，清水洗乾淨，擎乾水。 4. 薑，洗乾淨，拍鬆。 烹調： 1. 大火在鑊內燒熱油一湯匙。 2. 魚，放鑊內，轉中慢火煎香。 3. 另一邊，大火煲滾清水4升。 4. 魚，一面已煎至金黃色，反轉繼續煎。 5. 魚，兩面都已煎至金黃色，加入薑片，繼續煎，同時壓爛所有材料。 6. 轉大火，加入大滾水3升，冚蓋，大火滾起，轉中火，煲15分鐘。 7. 另一邊，預備一隻鑊。 8. 蓮子及百合，已浸至軟身，清水沖洗乾淨，擎乾水，放入鑊內。 9. 淮山，洗擦乾淨，去皮，切一舊舊，放入蓮子及百合內。 10. 湯已滾了15分鐘，過濾至蓮子及百合內。 11. 湯，大火滾起，轉中慢火，滾15分鐘，令蓮子及百合出味。 12. 杞子，加入湯內，再滾5至10分鐘。 13. 完成，可享用。 Golden threadfin bream soup with dried yam and dried lotus seeds Ingredients: Golden threadfin bream 2 catty Fresh yam 2 Nos. Dried lotus seeds 1 tael Dried lilly 1 tael Wolfberries 1 tael Ginger 1 No. (The amount of ingredients can be adjusted upon personal favorites.) Preparation: 1. Dried lotus seeds, put in a bowl. Soak in boiled-up water until they turn soft. 2. Dried lilly, put in a bowl. Soak in boiled-up water until it turns soft. 3. The fish, remove intestines. Rinse thoroughly. Drain. 4. Ginger, rinse with tap water. Beat well. Steps: 1. Heat up 1 tbsp of oil at high flame in wok. 2. The fish, put in the wok. Turn to medium-low flame and continue frying. 3. On the other side, heat up 4L of water at high flame. 4. The fish, one side has been fried into golden yellow, flip over and continue frying. 5. The fish, both sides have been fried into golden yellow, add in the ginger. Continue frying and squash all the ingredients. 6. Turn to high flame. Add in 4L of water. Cover up the wok. Heat up at high flame. Turn to medium flame and boil for 15 minutes. 7. On the other side, get ready for a wok. 8. Lotus seeds and dried lilly, have been softly soaked, rinse thoroughly. Drain. Put in the wok. 9. Fresh yam, brush thoroughly. Get it peeled. Cut in pieces. Put in the dried lotus seeds and dried lilly. 10. Soup has been boiled for 15 minutes, filter into the lotus seeds and dried lilly. 11. The soup, heat up at high flame. Turn to medium-low flame and boil for 15 minutes, to make the soup more flavorful. 12. Wolfberries, put in the soup, boil for 5-10 minutes more. 13. Complete.
