WARNING: This is a manual recipe. Read and follow the steps carefully. Do not add frozen ice cream mixture larger than 3 cm in the final stage. It may damage your knife. Therefore, use a silicone ice cube tray. 2. Place a bowl on top of the mixing bowl and add 100 gr of sugar. Set the bowl aside. 3. Add 1000g of milk (at least 3.3% fat). 4. Place the Varoma plate on top of the mixing lid. Do not skip this step; it prevents the milk from overflowing. 5. Steam the milk (Varoma for TM6) for 24 minutes at speed 5. Meanwhile, add 1 teaspoon of pure salep to the bowl containing the sugar and mix the sugar and salep with a spoon. 6. Slowly pour the sugar-salep mixture over the boiled milk and steam again (Varoma for TM6) for 10 minutes at speed 5. 7. In the final stage, add 2-3 drops of vanilla extract (you can also add 1 packet of vanilla or vanilla sugar prepared in the Thermomix). 8. Mix for 30 seconds at speed 4. 9. Allow the mixture to thicken and cool for 10 minutes at speed 2. 10. Pour the mixture into a silicone square-shaped container for freezing. Cover with plastic wrap or a freezer bag to prevent a crust from forming, and let it cool to room temperature before placing it in the freezer. Freeze for at least 24 hours. 11. Cut the ice cream into squares or add the frozen ice cream from the square ice cube tray to the mixing bowl. Do not add frozen ice cream larger than 3 cm in the final stage. It may damage your knife. (If you let your mixing bowl sit in the refrigerator for half an hour before this process, you will get better results with a cold mixing bowl in the summer heat.) 12. Blend the ice cream for 20 seconds at speed 6, and adjust the time by checking the consistency carefully. *** If you are making this with 2 liters of milk, double the measurements. Increase the cooking time from 24 minutes to 40 minutes, and the second cooking time from 10 minutes to 20 minutes. When blending in the final step, be sure to do it in two stages. Don't freeze the ice cream you made from 2 liters of milk at once. ***If it sticks to the bottom after the process, wash it with 1 liter of water and a dishwasher tablet in the "burned-in" wash mode, let it sit for half an hour.
