Hot chocolate as we know it today has very contemporary origins; in fact, we only need to go back a little, to the 1960s, when Duke Emanuele Filiberto of Savoy decided to celebrate his move to Turin with this drink. Back to us, last year I made hot drinks, and among the five suggestions was a hot chocolate, spiced with chili pepper, ginger, and cardamom, and vegan because it's dairy-free and made only with oat milk. From there, I said to myself: next year, I'll have to make a video specifically about hot chocolate. And here we are, ready to offer you creamy and dense hot chocolates that embrace you as you savor them. The idea of ​​offering the classic, dark version that everyone knows is a nice one, but perhaps it was limiting... With all the delicious flavors out there, the idea of ​​offering at least four flavors to make something more complete was a great one. So, let's start with the classic. In my Instagram stories, I've labeled it as "the ever-faithful evergreen." It manages to win everyone over, with its bitter notes from the dark chocolate, which are softened by the milk and the little sugar it contains. Dense and creamy, enriched with a mound of whipped cream and chocolate curls on top, although you could actually serve it with a pinch of fleur de sel or a drizzle of slightly salted caramel for a more original touch. Now for the white one, delicate and lovely. It's cocoa-free and has vanilla notes thanks to a small amount of vanilla, which I recommend adding to give the drink an interesting twist. In my case, I took a piece of a hollowed-out vanilla bean (which I'd used in another recipe) and added it to release the aromas it still retains, even though it's seedless. It's fantastic, enriched with a good amount of white chocolate, but not overly sweet because we use the sugars contained in white chocolate without adding any other sugars. Now for the hazelnut version, with pure hazelnuts and milk chocolate—a delight. It contains finely blended hazelnuts until creamy, a bit of hazelnut spread for richness, and some melted milk chocolate. This one, too, is sugar-free; you'll see, it's already delicious. The last one, pistachio, tastes truly like pistachio. And thank goodness, considering that the pistachio versions in bars and supermarkets taste like milk with a vaguely artificial aroma.
