My Husband Made the BEST Southern Tomato Pie 🍅
Ingredients -1 frozen deep dish pie crust -2 Roma tomatoes, thinly sliced -Salt, for sprinkling over tomatoes -1 container (11 oz) pimento cheese -1/2 cup shredded Monterey Jack cheese -1/4 block softened cream cheese -2 tablespoons mayonnaise -1 tablespoon can be Japanese mayo (optional) -Salt and pepper, to taste -1 tablespoon chopped fresh basil -1 tablespoon dried oregano -1/4 cup diced onion Instructions 1. Preheat oven to 400°F. 2. Thinly slice the Roma tomatoes and place them on paper towels. 3. Sprinkle lightly with salt and let them sit to draw out moisture. 4. Prepare the frozen pie crust according to package directions. 5. While the crust bakes, combine the following in a stand mixer bowl: -Pimento cheese -Monterey Jack cheese -Cream cheese -Mayonnaise -Salt and pepper -Basil -Oregano -Diced onion 6. Dab the tomatoes with a paper towel to remove excess moisture. 7. Spread a layer of the cheese mixture into the bottom of the baked pie crust. Add a single layer of tomatoes. Continue layering, ending with the cheese mixture on top. 8. Reduce oven temperature to 350°F and bake for about 40 minutes. 9. Let cool slightly before slicing and serving. Notes -Salting the tomatoes helps keep the pie from becoming watery. -Japanese mayo is optional, but it adds a little extra richness. -Fresh basil gives this pie a really fresh flavor.
