Chicken 1.520 g BRINE First Marinade Water 1.000 g White Vinegar 30 g Salt 20 g per liter of water White Sugar 30 g Monosodium Glucomate Seasoning 20 g KFC Spice Mix 8 TBSP Mustard 150 g KFC Spices Dried Thyme 2 TBSP 9 g Ginger Powder 2 tsp 4 g Dried Celery 2 TBSP 1.5 g Dried Basil 2 TBSP 1 g Dried Oregano 2 TBSP 5 g Black Pepper 2 tsp 6 g White Pepper 4 tsp 12 g Sweet Paprika 2 TBSP 14 g Garlic Powder 2 TBSP 26 g 1 tsp (5 g) Seasoning 2 beaten eggs (enough for all the chicken) 150 g Flour 150 g Cornstarch 15 g KFC Spice Mix 5 g Baking Soda 3 liters Vegetable Oil (enough for all the chicken) 2.5 liters remaining 0.5 liters used PREPARATION: • In a large container, combine all the BRINE ingredients and blend until smooth. Add the chopped chicken, mustard, and KFC Spice Mix and marinate for a minimum of 3 hours. For best results, marinate for 24 hours or more. • Separately, mix all the KFC Spice Mix with the flour and cornstarch. • Once the chicken is marinated, take some of the marinade liquid and add a few drops to the flour mixture to form a clump. • Coat the chicken thoroughly in flour and deep-fry at 170°C (340°F). • It's important to carefully control the heat. Fry for about 12 minutes, then remove. They're done when they begin to float slightly to the surface. Place them on a wire rack. • Give them a second fry for 1 minute just before serving; this will create the crispy crust.
