Uzbek Börek Recipe For the Dough: • 4 cups flour • ½ cup vegetable oil • Salt • Water (as needed) For the Filling: • 300 grams finely chopped meat • 3 onions • 1 tomato • ½ bunch parsley • ½ teaspoon black pepper • 1 teaspoon red pepper flakes • Salt • ½ cup olive oil For the Topping: • 1 egg • Nigella seeds ⸻ Instructions: 1. Dough Preparation: Place the flour in a kneading bowl. Add the vegetable oil and salt. Add water as needed and knead until you have a soft dough. Divide the dough into walnut-sized balls and let them rest for 20 minutes, covered. 2. Filling Preparation: Finely chop the meat. Chop the onions into small cubes. Finely chop the parsley. Add the meat, onion, parsley, olive oil, and spices, and adjust the salt. Knead well with your hands. Dice the tomato into small cubes and add it last, then mix again. 3. Preparing the pastry: Roll out the rested dough balls on a floured surface to the size of a plate. Place the filling in the center. Close the edges tightly, sealing them like a bundle to prevent air from entering. 4. Preparing the topping: Arrange the pastries on a greased baking tray. Whisk the egg and brush it over the pastries. Sprinkle with nigella seeds. 5. Baking: Bake in a preheated 180°C oven for approximately 35 minutes, or until nicely browned. 6. Serving: Serve the Uzbek pastry hot from the oven.
