I'm so excited to share this recipe for corn or jojoto cake with you. It's a flavor from my childhood, made without refined sugar or flour. How wonderful that our cultures are connected by flavors. In Paraguay, there's a similar but savory preparation for this cake called chipa guazú. In Mexico, they call it pan de elote (corn bread), and in some places, torta de choclo (choclo cake).
