古民家カフェ「栗のいえ」, 茨城県笠間市／Old folk house café "Kuri no Ie" in Kasama City, Ibaraki Prefecture

茨城県笠間市の「栗のいえ」を訪れました。ここは、築120年の古民家を改築した店で、栗を素材としたスイーツの店として有名です。オーナーシェフは地元出身の方で、パリの有名な三つ星レストランでパティシエを務められた後、帰国してここに店を構えられました。特に「こぼれモンブラン」は、栗のペーストをたっぷり削り、その上に栗の甘露煮をチーズおろしで削って仕上げられたモンブランで、中には生クリームとコクがあってすっきりしたマスカルポーネのアイスクリームが入っており、さらに自家製の甘露煮とメレンゲが食感にアクセントを加えます。重厚な古民家の中でいただいた「こぼれモンブラン」の栗の風味に、感動を覚えた一日でした。 撮影日：2024年9月12日 【撮影機材】 ・SONY FX30 (lens:TAMRON 17-70mm F2.8) ・DJI OSMO Pocket 3 I visited "Kuri no Ie" in Kasama City, Ibaraki Prefecture. The owner-chef is a local who worked as a pastry chef at a famous three-star restaurant in Paris before returning to Japan and setting up a restaurant here. In particular, the "Spilled Mont Blanc" is a Mont Blanc made by shaving plenty of chestnut paste and shaving the chestnut honeydew on top with cheese grater, and the inside contains fresh cream and rich and refreshing mascarpone ice cream, and the homemade honeydew stew and meringue add an accent to the texture.
