Additionally, we apply this technique within my recipe for Orange Beef and Broccoli. The orange sauce is aromatic, sweet and sour paired classically with beef and broccoli. The orange sauce and velveting techniques will work well with any protein including chicken, pork and shrimp. However if using shrimp (and depending on the size), limit the baking soda tenderizing time to 30 minutes or less.
