Italian Breaded Baked Eggplant Recipe

This Italian Breaded Baked Eggplant Recipe is fast, easy and delicious, but what I appreciate most is how many ways I can use these baked eggplant slices. Of course the best way is to make eggplant parmesan, however, there is also the eggplant roasted pepper hero and just a simple spaghetti topped with the Italian Breaded Baked Eggplant and some tomato sauce. How about as a pizza toping or some sauteed spinach sandwiched between 2 slices of eggplant. The possibilities are endless!
