Wash off any dirt and cut into appropriate sizes. Place in a pressure cooker, add garlic, ginger, and the green part of a leek, and pressurize using the red pin on the Zero Pressure Cooker. After pressurizing for 30 minutes, let it release naturally. Separate the soup and meat and store. [Beef Tendon Soup] This is a make-it-yourself soup, so there are no specific measurements 🥺 Add enoki and shimeji mushrooms to the soup (including the gelatinous part) that comes out when preparing the beef tendons. Bring to a boil, then add an appropriate amount of outdoor spice Horinishi (aim for 1% salt content!), sugar, and vinegar to taste. Add mitsuba and it's done. Serve in a bowl and add condiments as desired. [Beef Tendon and Egg Rice Bowl] Warm the beef tendons and add an appropriate amount of sukiyaki sauce. Taste and it's okay if it's a little on the strong side. Add the eggs and cook until soft-boiled, then place on top of rice. Crack a raw egg on top and add condiments as desired. Note for Humans 👾 I feel that 200g of rice, 50g of prepared beef tendons, and 2 eggs is about the right amount for humans. The amount of sukiyaki sauce is appropriate. The amount of sukiyaki sauce varies depending on the manufacturer, but since rice + egg + beef tendon is about 350g, it's a good idea to adjust the amount of salt to about 2g-3g based on the salt content of the sauce!
