Around 1870, a cowboy cook could bury an ash cake beside the coals for only one or two cents, using little more than cornmeal, water, salt, and the patience to wait beside the fire. This channel keeps those meals from being forgotten — the Depression-era "poor man's" suppers, the wartime rationing kitchens, the Appalachian and Midwest and immigrant cooking that fed working America from the 1900s through the 1980s. Each episode counts down forgotten recipes anchored to a real year, a real price, and a real place — drawn from vintage cookbooks, oral histories, and the cards your grandmother kept in her own recipe box. In this episode: Twenty-five forgotten cowboy meals reveal what chuck wagon cooks served during nineteenth-century cattle drives, using cast iron, cornmeal, hardtack, sourdough starter, dried beans, salt pork, wild greens, hunted meat, and whatever remained before the next supply town. The trail moves from ash cakes, sourdough camp pancakes, salt pork and beans, and trail chili to Prairie Oyster scramble, Son of a Gun Stew, and old biscuit pudding. The final dishes uncover how cowboy coffee called men out of the darkness and why a sweet pudding boiled inside a cloth sack became an act of dignity for cattlemen spending Christmas far from home.
