The Summer Soup I Can't Stop Making

This potato mushroom soup is our absolute favorite in winter or summer. It is so simple to make and you can throw in any vegetable you have. If you enjoy this video please subscribe and follow my other accounts: Instagram: (  / frommaskitchen  ) TikTok: (  / from.mas.kitchen  ) Facebook: (  / from-mas-kitchen-61575251033142  ) Ingredients: 2 Tbsp Butter 1 1/2 cup Onion, chopped 2 tsp Garlic, chopped 1tsp Ginger, chopped 1 Tbsp Shallots, sliced 3 medium russet potatoes, peeled and cut into small cubes 4 cup Chicken or vegetable broth 3/4 cup Milk 2 Tbsp Cream Salt to Taste 1tsp Black Pepper 1Tbsp Sugar 1/2 cup Corn 1 cup Spinach 8 oz Mushroom, cut into small pieces 1 Tbsp Lime Juice 2 Tbsp Green onion 1 Tbsp Cilantro 1 Tbsp Chives 1 Tbsp Everyday seasoning Method: 1. Heat a large pot, add butter and sauté onion, garlic, ginger and shallots until limp. 2. Add potatoes and sauté for a few minutes. 3. Add broth, let it come to a boil, cover and let it simmer until potatoes are done. 4. Add milk and cream. 5. Add corn and spinach and boil for a few minutes. 6. Add mushroom and let it boil for a few more minutes. 7. Add salt, black pepper, sugar, lime juice and everyday seasoning. 8. Garnish with green onions, cilantro, chives and little everyday seasoning. 9. Enough for 4-6 people It is a very comforting cozy meal with rich earthy flavor and high in protein, fiber and potassium. Everyday Seasoning (I got it from Trader Joes) 1 Tbsp yellow mustard seed 1 Tbsp Peppercorns 1 Tbsp Coriander Seeds 1 tsp dried onion 1/2 tsp dried garlic 1/2 tsp Paprika 1/2 tsp Red pepper flakes Grind it coarse or keep it in a small grinder bottle.
