⬇️⬇️English recipe follows⬇️⬇️ 電飯煲蒜香豉油皇手撕雞髀 材料: 急凍雞脾3隻 蒜頭5粒 薑一小舊(已去皮及切片) 乾蔥頭3個(已去皮) 蒜頭6粒 蔥段適量 處理: 1. 雞髀,清水解凍。 2. 雞髀已解凍,倒去水分,加入粗鹽2茶匙乸5分鐘,除去雪味、腥味,及加入少許鹹味。 3. 雞髀,清水沖洗乾淨,擎乾水。 4. 雞髀,放入一個大碗內,用大滾水淥30秒,放大碟上。 5. 雞髀,加入調味料: a. 老抽2湯匙 b. 生抽2湯匙 c. 蠔油2湯匙 d. 胡椒粉適量 撈勻,醃10分鐘或以上。 10. 洗乾淨電飯煲。 烹調: 1. 電飯煲內,加入: a. 蔥段 b. 薑片 c. 蒜頭(已去皮及拍鬆) d. 乾蔥頭(已去皮及一開二) 2. 雞髀,放上面,同時倒入醬汁,及加入冰糖50克。 2. 用正常煮飯程序,蓋上煲蓋,但不要鎮實,煮15分鐘。 3. 已煮了5分鐘,反轉雞髀,蓋實煲蓋,焗10分鐘。 4. 雞髀,用筷子試一試是否能穿過。 5. 雞髀,夾上碟。 6. 醬汁,攞凍。 7. 雞髀,雞肉撕成條狀,放碟上。 8. 醬汁,淋在雞肉上。 9. 灑上芫荽碎及辣椒碎。 10. 完成,可享用。 Shredded chicken in garlic soy sauce with rice cooker Ingredients: Frozen chicken legs 3 Nos. Garlics 5 Nos. Ginger (small) 1 No. (already get peeled and sliced) Shallots 3 Nos. (already get peeled) Garlics 6 Nos. Spring onion (in lengths) appropriate amount Preparation: 1. Chicken legs, defrost in tap water. 2. Chicken legs have been defrosted, pour away water. Add in 2 tsp of cooking salt, season for 5 minutes, to remove unpleasant smells and add some salty tastes to them. 3. Chicken legs, rinse thoroughly. Drain. 4. Chicken legs, put in a big bowl. Soak in boiled-up water for 30 seconds. Put on a big plate. 5. Chicken legs, add seasoning: a. Dark soya sauce 2 tbsp b. Light soya sauce 2 tbsp c. Oyster sauce 2 tbsp d. Pepper appropriate amount Mix well. Season for 10 minutes or more. 10. Rinse a rice cooker. Steps: 1. In the rice cooker, add in: a. Spring onion (in lengths) b. Ginger slices b. Garlics (already peeled) c. Garlics (ready peeled and beat well) d. Shallots (already peeled and divided into 2 shares 2. Put chicken legs on top. Add in the sauce at the same time and add in 50g of rock sugar. 2. Use normal cooking steps, cover up the cooker, but leave a gap. Cook for 15 minutes. 3. Have been cooked for 5 minutes, flip over the legs. Cover up the pot properly. Leave it for 10 minutes. 4. Chicken legs, use a pair of chopsticks to check if they can be pinched through. 5. Chicken legs, put on a plate. 6. The sauce, wait for cooling down. 7. Chicken legs, tear the meat in stripes. Put on a plate. 8. The sauce, pour on top of the chicken. 9.
