Departing Cosgrove… or are we?! One minute we’re setting off on the Grand Union Canal towards our next mooring, and the next minute our plans completely change. Just goes to show how quickly life on the water can turn around! Luckily Ernie isn’t complaining — it means more adventures, riverside walks, and exploring the beautiful paths along the River Ouse. We’ve also had the exterior boat paint delivered… and let’s just say the colour looks VERY different to what we ordered online 😳 Have we made a huge mistake? We test it out, bake some treats in the galley and try to decide if this new colour is right for our boat… 🍰 Flourless, sugar-free Cake 🍽 Key Ingredients & Preparation 2 ripe bananas (mashed) 1/2 cup (120g) plain Greek yogurt 1.5 cups (150g) oat flour or rolled oats 2 large eggs 1/3 to 1/2 cup chopped walnuts 1 tsp baking powder 1/2 tsp cinnamon pinch of salt 1 tsp vanilla Preparation: Mix wet ingredients, add dry ingredients, fold in walnuts, bake at 350°F ( 175°C) for 25-30 minutes. 🥜 Homemade Seed & Nut Granola 🍽 Ingredients: 2 cups rolled oats ½ cup pumpkin seeds ½ cup sunflower seeds ¼ cup chia seeds ½ cup cashew nuts, roughly chopped ½ tsp salt ⅓ cup maple syrup ¼ cup olive oil ½ cup dried cranberries Method Preheat oven to 160°C (320°F). In a large bowl, mix oats, pumpkin seeds, sunflower seeds, chia seeds, cashews, cranberries and salt. Stir in olive oil and maple syrup until everything is coated. Spread evenly on a lined baking tray. Bake for 20–25 minutes, stirring halfway through, until golden. Let it cool completely (it crisps up as it cools). Great with yogurt, milk, or straight from the jar. Store in an airtight container for up to 2 weeks. 🥜Homemade Seed & Nut Granola Bars 🍽 Ingredients 2 cups rolled oats 1/2 cup pumpkin seeds 1/2 cup sunflower seeds 1/3 cup sesame seeds 1/2 cup cashews, roughly chopped 1/2 cup almonds, roughly chopped 1/2 tsp sea salt 1 tsp cinnamon (optional) 1/3 cup olive oil 1/2 cup maple syrup 1 tsp vanilla extract (optional) Instructions Preheat the oven.Set oven to 170°C (340°F). Line an 8x8-inch baking tin with parchment paper. Toast the dry ingredients. In a large bowl, combine oats, pumpkin seeds, sunflower seeds, sesame seeds, cashews, almonds, salt, and cinnamon.Warm the wet ingredients in a small saucepan over low heat, gently warm the olive oil and maple syrup together for 1–2 minutes. Stir in vanilla if using. Mix everything together Pour the wet mixture into the dry ingredients and stir thoroughly until evenly coated. Press firmly into the tin. Transfer mixture to the lined tin and press down very firmly with the back of a spoon or the bottom of a glass. This helps the bars stay together. Bake for 22–28 minutes until golden around the edges. Cool completely. Let cool in the tin for at least 1 hour before slicing into bars. Storage Keep in an airtight container for up to 1 week. Refrigerate for firmer bars. Freeze for up to 3 months.
