The Ultimate Crunchy Tea-Time Snack Recipe | No Maida 1 Month Storable Moong Dal Mathri Tea Time Snacks Crunchy Snacks Indian Snack Recipe Healthy Mathri No Maida Recipe Storable Snacks Mathri Recipe Indian Tea Time Recipe Homemade Mathri — Timestamps ⏱️ 00:00 Intro – Best Crunchy Moong Dal Snacks Recipe 00:18 Wash & soak moong dal 00:45 Drain soaked dal 01:05 Grind moong dal with chili & ginger 01:40 Make spiced dough 02:50 Add fat (oil/ghee) & knead 03:40 Rest the dough 04:05 Roll dough sheet 04:40 Cut mathri shapes 05:05 Prick to avoid puffing 05:30 Fry on low-medium flame 06:40 Check perfect crunch 07:10 Cool & storage for 1 month Ingredients 🥣 Best Crunchy Moong Dal Mathri (No Maida): 1/2 cup moong dal (yellow, without skin), soaked 2 green chilies 1 inch ginger piece 2 cups whole wheat flour (atta) 1 tsp cumin seeds 1 tsp ajwain (carom seeds), lightly crushed 1/2–3/4 tsp salt (or to taste) 1/2 tsp red chili powder or chili flakes 1/4 tsp turmeric powder 1/2 tsp black pepper powder 1–2 tsp sesame seeds 1–2 tbsp kasuri methi / fresh coriander (optional) 2–3 tbsp oil or ghee for moyan (fat in dough) Water as needed for tight dough Oil for deep frying Step-by-Step Recipe: Crunchy Moong Dal Tea-Time Mathri: Wash 1/2 cup moong dal 2–3 times. Soak in water for about 2 hours. After soaking, drain water completely. Add soaked dal, green chilies and ginger to a grinder jar. Grind to a coarse paste without adding water. In a mixing bowl, add wheat flour, cumin seeds, crushed ajwain, salt, red chili, turmeric, black pepper, sesame seeds and kasuri methi/coriander. Add moong dal paste and mix well with hands. Add oil/ghee for moyan and rub into the flour until crumbly. Slowly add little water and knead a tight, stiff dough. Rest for 10–15 minutes. Take a portion of dough and roll into a medium-thick sheet (not too thin). Cut into small round or desired shapes using a cutter or lid. Prick each piece with a fork so they don’t puff while frying. Heat oil on medium, then lower the flame. Fry mathri on low-medium heat, flipping in between, until golden and super crunchy. Remove on tissue, let them cool completely. Store in an airtight container – stays crispy for up to 1 month.
