Making Salmoretta Pasta for Paella -    • Паэлья с морепродуктами. Осьминог, каракат...   and here, even more briefly -    • Паэлья, как она должна готовиться НА САМОМ...   For 1 liter of broth: Water 1.2-1.3 liters Wolffish spine 300-400g Cod spine 300-400g Shrimp shells 80-100g Carrots 200g Onions 200g Leeks (optional) 200g Olive oil 20-30ml Bay leaves 1-2 Salt to taste Paella for 4 Per person (frying pan at least 43 cm in diameter): Broth 1 liter Round grain rice 340g Cod fillet 300-500g Flour for breading 50-70g Large unpeeled raw shrimp 4 pcs (for garnish) Mussels 8-16 pcs (quantity depends on size) Onions 200-250g Tomatoes 200-250g Green beans 150g Large white beans (frozen) 150g Sweet pepper 200-300g Mojada Extra virgin olive oil 100ml Fresh garlic 3-4 cloves Parsley 1 bunch Basic steps: Broth: Fry chopped onion and carrot in heated oil until soft, add shrimp shells, fry for a few more minutes, add fish "parts," cover with water, add bay leaf, simmer at medium heat for 30-60 minutes, season with salt to taste, and strain. Mojada: Finely chop parsley and garlic, add oil, and let simmer for at least 30 minutes. Paella: Divide the pepper in half, finely dice one half, and cut the other into 4 strips. Finely dice the onion. Remove 2-3 tablespoons of oil from the mojada and strain through a sieve. Heat this oil, fry the shrimp on both sides until golden brown, and set aside. In the same oil, fry the pepper strips on both sides for 3-5 minutes, then remove from heat. Cut the fish into pieces, coat in flour, and place in the same pan. Season with the remaining mojada, brown, and remove from heat. Add the diced onion and pepper to the same pan and fry for 5-8 minutes. Grate the tomatoes. Add the beans to the onion and pepper and fry for another 4-5 minutes. Add the pureed tomatoes and fry for another 4-5 minutes. Add the saffron. Fry for 1 minute, add rice, stir-fry for 2-3 minutes, add broth, bring to a boil, reduce heat, simmer for 10 minutes, add fish, simmer for 5 minutes, add mussels, shrimp, and pepper strips, simmer for another 3 minutes, turn off heat, cover the paella, and let it sit for 15 minutes.
