PORTUGAL RENOVATION - It's going up on our Portuguese Homestead!!!

This week we get some much appreciated, Nd much needed help from some good friends Andy, Brad and Nick from ‪@projectportugal‬ ,along with whip cracking from Natalia and Mandy, to get the last bit of the walls finished for the roof to go back up. We would like to thank each one of them for the help, we would not have been as far along if it weren't for them. We also make a quick and easy couscous dish with a special spice mix from friends Ian and Fiona from Quinta das Brisas, which is a great side dish for many dishes. Recipe: 1 cup couscous 1 cup hot water or stock 2tsp spice mix of choice Butter In a bowl or dish, mix the couscous and the dry spices well, before doing the hot water or stock, and stir through. Place bits of butter on the top, then cover and let stand for 15 minutes. Rub through with fingers to separate all the grains and to mix in the butter,then place in an oven proof dish. Bake at 200°C for 15-20 minutes,or in an air fryer like we did at 165°C for 15 minutes. Serve with roasted veggies and protein of choice. Adding cut figs before frying brings a lovely sweetness to the dish.
