The Bigger Your Pour Over, The Worse It Gets (Here's Why)
Making one pour over coffee is simple. But when you scale up to make coffee for four people, things can quickly go wrong. In this video, Lizzie shows how to make an 800ml pour over using a 6 cup Chemex, with 50g of coffee and 800g of water. This makes around four 200ml cups of coffee. The recipe is demonstrated with a Chemex, but the same principles apply to larger V60 brews and other pour over coffee methods. When you make a bigger pour over, the coffee bed gets deeper. This creates more resistance, which means the water drains more slowly. If you use the same grind size as a single cup pour over, the brew can stall and taste bitter, muddy, dry, or weak. For larger pour over coffee recipes, you usually need to grind slightly coarser than you would for a single cup. Not extremely coarse — just a small step coarser to help the water move evenly through the coffee. If it tastes weak, sour, or hollow, try grinding a little finer. If it tastes uneven, check your bloom and pouring technique before changing the whole recipe.
