This time, I'm going to open up my wine cellar. I'll be introducing some of my favorite wines I've kept for the past six months, so please watch until the end. I don't have a dedicated wine cellar at home. These days, I can easily purchase both fresh and ready-to-drink wines directly from the store, so cellaring is unnecessary. I buy expensive wines at my favorite stores, Ravin, Terroir, and Pierrot Market, and then consume them through a list group. At home, I personally drink Cava and Sauvignon Blanc, and on special weekends, I enjoy Champagne and Burgundy Pinot Noir. So, today, I'm introducing my cellar, which I've organized into four shelves at my office, where I store Champagne, White, Burgundy, and other wines. The first one is the Cristal 2000 Vintage. I first tried the 2008 vintage of Cristal Champagne. Five years ago, I bought a bottle for 750,000 won and tasted it, and it completely shattered my illusions about expensive champagne. It had a strong acidity, reminiscent of lemon juice, strong carbonation, and lemon and citrus-centered aromas, making it feel unbalanced. After experiencing expensive champagnes like Jaxelous and Salon, I learned that good champagne should not be drunk young. So, I wanted to experience well-aged Cristal again, so I bought it. At the time, it was a champagne presented to the emperor, and it was specially crafted with a flat bottom to prevent bombs from being placed on the bottom. The second bottle is Dom Pérignon 2004 Vintage. To choose an older vintage of expensive champagne, open the WineSearcher app, select the wine, and see the ratings and average price for each vintage. I like Dom Pérignon Old Vintage because it's the champagne with the lowest chance of failure. And the Dom Pérignon's signature charcoal, smoky flavor, and white floral notes sometimes come to mind, like Pyongyang naengmyeon (cold noodles). Next up is Krug 173. 173 refers to the production edition. Up to 171, the wines emphasized soft acidity, nutty notes, and brioche flavors. From 172 onward, the acidity shifted to a more delicate control, focusing on lemon and citrus. At first, I was a bit skeptical, but after drinking it more often, I've come to the conclusion that Krug's impact simply isn't there in this price range. This is Bruno Paillard Extra Brut. RM Champagne isn't mass-produced like Piper-Heidsieck, but rather produces small quantities from its own vineyards. Its signature browned apple flavor, smoky notes, small, thin bubbles, and lively white floral notes make it feel like drinking white wine. This was the first wine that made me fall in love with RM Champagne. The dosage is the amount of sugar added to the empty space after degorgement. This champagne contains 5.5 grams per liter. It typically has a slightly sweet taste, with a concentration of 1 to 3 grams. Next is the Aigle Urieux Les Premises champagne. This is the entry-level version of RM Champagne, a leading producer. It was originally an experimental project wine, but due to its positive reception, it was included in the standard lineup. Degorgement refers to the process of removing the yeast lees from the champagne when the cork is opened, and this date is used to determine the age of the champagne. This champagne was degorgement in November 2024, making it a relatively fresh champagne. Next is the Jacquesson 748. This also refers to the cuvée number. I enjoyed the 747 so much that I recently purchased the newly released 748. The owner of Krug previously worked at Jacquesson. So, when I want to drink Krug, I usually drink Jacquesson for its value. This is Nicolas Maillard 2008. The best vintage for Champagne is 2008. It was a time when the grapes were not too hot, allowing them to develop delicately, and the temperature difference allowed them to fully bloom. I don't think there's any wine in the mid-100,000 won range that has such a solid structure and such a good balance of aroma and flavor. These are Gros Frèret and Michel Gros, both from the same Gros family. Gros Frèret has a golden bowl-shaped label and is a bit more airy than AFGRO, while Michel Gros has a berry-like style reminiscent of strawberry jam. This is Emmanuel Houget Blanc 2023. He is famous as the successor to Henri Jayer, known as the "God of Burgundy." I prefer Emmanuel Houget over Leroy Blanc. Leroy has a stronger natural nuance, while Houget is more familiar. The first red is A.F. GROS's Vosne-Romané Auréat 2011. Vosne-Romané refers to a region in Burgundy, and Auréat refers to a specific vineyard where excellent Pinot Noir is grown. I like it because it's the most delicate yet characterful style among the Gros family. If I had to pick one Burgundy Regionale, I'd say it's Jean-Marie Fourier's Bourgogne Rouge. The region on the label is usually the main production area, a producer representing Givry-Chambertin. Good producers are known to blend a lot of quality village-level grapes to promote their Regionale, and for a Regionale, this win...
