Ingredients: Strawberries — 3.5 kg Sugar — 1 kg Citric acid — 1 tsp Water — 3 l First, I prepared all the ingredients. I have 3.5 kilograms of strawberries. I washed the berries well beforehand, removed the tails and poured them into a large saucepan. I add one kilogram of sugar. The amount of sugar can be adjusted to your own taste. It all depends on the sweetness of the berries and your preferences. If the strawberries are very sweet, you can take a little less sugar, and if they are sour — on the contrary, add more. Now I mash the strawberries with a blender until smooth. Already at this stage, the aroma is incredible. The better the berries are chopped, the more flavor and color they will give to the future nectar. Next, I put the pan on the fire and pour in 3 liters of water. I mix well and bring the mass to a boil. During heating, the sugar completely dissolves, and the strawberries give off their rich aroma and color. After boiling, I remove the pan from the heat. Now I strain the strawberry mass through a colander or sieve. I do this in order to remove most of the seeds and make the drink more tender. If the seeds do not bother you, you can skip this stage and leave the nectar as it is. Look at how many seeds remain after straining. This is what makes the drink more uniform and pleasant to the taste. Straining takes a little time, but the result is worth it. The nectar becomes more tender and more reminiscent of real homemade juice. Now I put the pan on the fire again. I add 1 tsp. citric acid. After boiling, I boil the nectar for about five minutes. It is not necessary to boil it longer to preserve the maximum natural taste and aroma of strawberries. While the nectar is hot, I pour it into prepared sterilized jars. I fill the jars almost to the top and immediately close them with lids. I use ordinary metal lids with a sealing key, but jars with screw caps will also work perfectly. The main thing is that the jars and lids are clean and well sterilized. I fill all the jars in this way. From this amount of ingredients, I got five liter jars and another 800 milliliter jar. The next day, the nectar has completely cooled. Look at what a beautiful rich color it has. It looks just great! In winter, such a drink becomes a real find. You can drink it just like that, serve it with desserts or use it to make various drinks. I often make this nectar not only from strawberries, but also from apricots, peaches or plums. And in winter I like to combine different flavors with each other - it turns out very interesting and tasty. Homemade nectar is much better than store-bought, because you know exactly its composition and use only natural products. Friends, be sure to try making such a preparation for the winter.
