I attempt to cook Pollo Chuco ("dirty" Honduran fried chicken) with Tajadas de Guineo (fried banana chips) to show you one of the most popular street foods of Honduras. I spend the day with Chef Yenni who runs a food stand near Villa Soleada in the city of El Progreso to walk you through step-by-step the process, from purchasing ingredients at the market, seasoning the chicken, making the sauces, cutting down bananas, making “encurtido” pickles, and frying the chicken. I had no idea the process was so complex!
