For my Tuesday installment of "Pranzi al Volo," today I'm bringing you a clever sauce I make while the pasta cooks: all you need is a blender and a few ingredients to make an irresistible sauce. The trick that changes everything? Thin the sauce with a little pasta cooking water to make it creamy and enveloping. Ingredients Fresh pasta Pecorino cheese Parmesan cheese Cooked bell pepper (microwaved, grilled, sautéed, or pre-packaged) Dried tomatoes (the same amount as the bell pepper) Fresh basil Chili pepper A thin slice of garlic Extra virgin olive oil Cooking water from the tomato sauce The great thing about this sauce is that you can make it ahead of time: store it in a glass jar covered with a drizzle of olive oil and it will keep for 3-4 days in the refrigerator. Or freeze it in small portions. It's also delicious spread on toast for an aperitif or an impromptu dinner.
