Tender meat fingers—or vertuny, as we call them in my family—are stuffed with a fragrant filling of sautéed mushrooms, onions, and prunes. The meat is tender, juicy, and very festive. The fingers are cooked in a delicate, creamy, spicy sauce, which makes the dish especially rich and delicious.
