Mix the Dough Flour, water, yeast, salt, sugar, ỉmprover, oil in the mixer until hearing bubble sounds, elastic dough. Make sure final temp around 22-26 if too hot, pls add some cold water. 2. Divide Divide dough into equal portions (about 110 each). Pre-shape into small logs and rest for 30 minutes. Shape into baguettes and seal the seam tightly. 4. Final Proof Place shaped dough on a baguette tray or baking cloth. Proof for 2 - 3 hours until light and puffy. 5. Score the Dough Use a sharp blade to make one long cut along the center. Proper scoring helps create the classic Vietnamese baguette "ear." 6. Bake Preheat oven to 220-230°C (465°F). Create steam during the first part of baking.
