Amazing results. 🥣 INGREDIENTS 1 tortilla 3 eggs salmon - 150 g / 5.5 oz oyster mushrooms 50 g / 1.8 oz leek 30 g / 1 oz cauliflower 50–70 g / 1.8–2.5 oz 1 mozzarella ball / 125 g / 4.4 oz Olive oil Salt Black pepper 👨‍🍳 INSTRUCTIONS Crack 3 eggs into a bowl and whisk well. Add salt and black pepper to taste and whisk again. Slice the leek into 10 rings. Cut the salmon into small pieces. Trim the root ends of the oyster mushrooms and finely chop them. Finely chop the cauliflower. Cut the mozzarella into small cubes. Place a tortilla in the air fryer basket or baking dish. Add the salmon. Add the oyster mushrooms. Add the leek. Add the cauliflower. Season with salt and black pepper. Pour the beaten eggs over everything. Gently mix all the ingredients inside the tortilla. Sprinkle the mozzarella on top. Brush the edges of the tortilla with olive oil to prevent burning. Cook in the air fryer at 170°C / 340°F for 20 minutes.
