If the aroma is too strong, I recommend diluting it with water; because it can darken the color of the rice and make it bitter. -Always add hot water to hot sautéed rice. -It takes about 10 minutes for the rice to absorb all the water after adding it. -You can cook basmati rice completely oil-free using the technique I've shown. -If you think basmati rice smells bad, I suggest trying a different brand; because as someone who loves basmati, the first brand I tried when I returned to Turkey smelled truly awful. I've experienced this with several brands. -In rice dishes, butter and vegetable oil are usually mixed (to prevent the butter from burning), but you can use only butter by controlling the heat. -I recommend using a microwave to reheat leftover rice for the next day. If you're cooking in a pan, it's best to use a non-stick pan. -For shiny rice, make sure every grain of rice comes into contact with the oil and adjust the amount of oil accordingly. -If you stir the rice after adding the water, the rice will release its starch and you'll end up with mushy rice. So, be careful not to stir too much.
