Easy Halloumi Salad | Healthy Vegetarian Lunch Recipe
This easy halloumi salad is fresh, colourful and perfect for lunch or a light dinner. Warm halloumi, crunchy vegetables and a simple homemade lemon dressing come together in under 20 minutes. Ingredients (Serves 4) Halloumi 300g halloumi 1 tbsp olive oil Salad 1 romaine lettuce 1 large cucumber 250g cherry tomatoes ½ red onion 20g fresh parsley 50g pomegranate seeds Dressing 4 tbsp olive oil Juice of 1 lemon 1 tsp Dijon mustard 1 garlic clove, grated ½ tsp salt ¼ tsp black pepper Method 1. Chop all the vegetables. 2. Mix the dressing. 3. Fry the halloumi until golden. 4. Toss the salad with the dressing. 5. Top with the warm halloumi and pomegranate seeds. 6. Enjoy!
