Episode 155 Namaste, I am Pooja and Welcome to a कोकमचे मासा फ्राय, कोळंबी कालवण व तिवळ | Kokum special | Village Cooking | Red Soil Stories ‪@RedSoilStories‬ 🌿🍒 Kokum (Garcinia Indica) is one of the major crops of the Konkan region. It is mainly used to add a tangy flavor to food. Traditional Konkani and Malvani cuisine feels incomplete without kokum. 🍛❤️🌧️ Before the monsoon arrived, I went to the forest to collect kokum fruits. This year, the kokum harvest was abundant. 🌳🍒 I picked as many fresh fruits as I could carry and brought them straight home. ❤️ The bright red, juicy kokum fruits have a sour outer rind, while the seeds inside have a delicious sweet-and-sour taste. 😋 🏡 After returning home, I peeled the kokum fruits, separated the seeds, and spread the kokum rinds out to dry in the sun. ☀️🍒 The seeds were coated with ash and also left to dry. 🍯 I used some of the fresh kokum fruits to make Kokum Syrup and Sweet Kokum by mixing them with sugar and placing them in the sun. ☀️🥤 These delicacies take about 15–20 days to prepare. 🔄 During this period, the kokum rinds are soaked in kokum juice and sun-dried three to four times. This traditional process enhances their flavor and quality. ✨ 🥰 After fifteen days, fresh Agal (kokum concentrate), Amsul (sun-dried kokum), Kokum Syrup, and Sweet Kokum were ready. 🥤 I made refreshing kokum sharbat from the fresh syrup. 🍹 I also prepared delicious dishes using fresh amsul, including: 🐟 Kokum Fish Fry 🍲 Kokum Tivla (traditional kokum curry) 🦐 Malvani Prawn Curry 😍 The taste of all these dishes made from freshly harvested kokum was simply unforgettable and beyond words! 🌿🍒☀️ #Kokum #GarciniaIndica #Konkan #MalvaniFood #TraditionalFood #VillageLife #MonsoonHarvest #KokumSyrup #Amsul #IndianCuisine #FoodCulture #OrganicLiving Don’t forget to LIKE 👍, SHARE 🔄 & SUBSCRIBE 🔔 for more village life & homemade recipes!
