Originating from South Asia with deep roots in Persian culinary history, the dish is celebrated for its complex flavor profile achieved through slow steaming, traditionally known as the dum cooking method. If you want to cook a simple yet authentic restaurant-style biryani at home, follow this easy method: Marinate the Protein: In a large mixing bowl, combine 1 kg of bone-in chicken pieces with 1 cup of plain yogurt, 1.5 tablespoons of ginger-garlic paste, 2 teaspoons of red chili powder, 1.5 tablespoons of ready-made biryani masala, a handful of chopped mint and coriander leaves, and salt to taste. Slow Cook: Seal the pot tightly with an airtight lid or aluminum foil. Cook on high heat for 8 minutes, then reduce the heat to the lowest setting and let it steam (dum) for 25 to 30 minutes. Rest for 10 minutes before gently fluffing and serving hot with a side of refreshing onion raita. Hyderabadi Biryani: Known as the king of biryanis in India. It relies heavily on raw marinated meat (Kachchi style) cooked directly under layered parboiled rice with intense spice notes. Kolkata Biryani: A subtle, fragrant variation characterized by the mandatory inclusion of large, slow-cooked juicy potatoes and a sweet, aromatic hint of rose water or Meetha Attar Malabar/Thalassery Biryani: Popular in Kerala. It uniquely uses a short-grain, thin fragrant rice variety called Kaima or Jeerakasala instead of basmati, cooked with a generous amount of pure ghee.
