Migas are an emblematic dish of traditional Spanish cuisine. Especially rooted in regions such as Castilla la Mancha, Extremadura, Andalusia and Aragon. Its origin is linked to the life of shepherds, as it arose as a way to take advantage of the basic foods that shepherds carried with them on their long days in the fields: stale bread, bacon, garlic and oil. In this video I show you how to prepare migas manchegas, one of the most emblematic versions of this dish, which I learned to prepare from my father.
