PARMIGIANA DI PATATE AL FORNO
My Own Rich Potato Parmigiana Ingredients for 8 people 25x35x8 cm baking dish 1.3 kg potatoes 3 pork sausages 200 g cooked ham 350 g soft cheese 120 g Grana Padano or Parmesan cheese 600 ml milk 35 g butter 45 g flour 3-4 tablespoons extra virgin olive oil 4-5 tablespoons breadcrumbs Salt to taste Pepper to taste Nutmeg to taste Peel the potatoes and cut them into thin slices (preferably with a mandolin). Rinse them under running water until the initially cloudy water becomes clear and set aside. Place the butter in a saucepan and melt it over low heat. Add the flour, and once the roux is formed, slowly add the milk and stir. Once all the milk has been added, continue stirring, adding salt, pepper, and nutmeg. Stir until thickened (4-5 minutes), keeping the heat low and avoiding lumps. Now spread a little béchamel sauce on the bottom of a baking dish. Arrange the potatoes and create a first layer. Add a pinch of salt and pepper, then more béchamel sauce. Add the grated cheese. Add the ham, cheese, and sausage. Make additional layers in the same way until all the ingredients are used. On the last layer, add salt, pepper, béchamel sauce, and breadcrumbs. and a drizzle of oil. Place in the oven and bake for at least 90 minutes at 150°C (300°F) in a conventional or fan-assisted oven.
