Paola Carosella's grilled zucchini with curd and spices is a light and sophisticated dish that combines simplicity and flavor in every bite. Check out the step-by-step instructions: INGREDIENTS Grilled zucchini with curd and spices 1 kilo of small zucchini Olive oil to taste Sea salt to taste Freshly ground black pepper to taste Juice of half a lemon 1 teaspoon of toasted and ground coriander seeds 1 teaspoon of Calabrian chili flakes 1 cup of fresh mint leaves 4 tablespoons of toasted and chopped hazelnuts 1 tablespoon of pomegranate syrup Half a cup of pomegranate seeds 400 grams of dry curd PREPARATION METHOD Grilled zucchini with curd and spices Cut the zucchini into 2-centimeter slices with the skin on. Dry the slices with a napkin to remove excess water. Heat a frying pan with approximately 2 tablespoons of olive oil and place the zucchini slices. Let them brown on both sides. While they are still hot, season with salt and black pepper to taste, the Calabrian pepper, the toasted and ground coriander seeds, olive oil to taste and the Sicilian lemon juice. Set aside. In a bowl, mix the mint leaves, the toasted and chopped hazelnuts, 1 pinch of salt and 1 drizzle of olive oil and mix. Distribute the curd in a dish, add the zucchini slices on top of the curd and the seasonings left from the zucchini. Sprinkle the pomegranate seeds on top and drizzle everything with pomegranate syrup.
