Things didn’t go exactly to plan — a classic BBQ fail — but one rack made it through and turned out beautifully. Using Royal Oak lump charcoal and Peach wood chunks, I smoked the ribs at around 300°F for 2.5 hours. The seasoning of choice? Killer Hogs “The Rub”, bringing out all the flavor in those meaty St. Louis spare ribs.
